Distilled in Durham, our gin boasts refreshing flavours of juniper with touches of apple, pear, raspberries and blackberries. Our gins are inspired by our distiller’s memorable summers in his grandad’s back garden, and so it was of fundamental importance for us to recapture the charm and the nature that the North East boasts. THE PROCESS
THE INGREDIENTS
At WL Distillery, we take great interest in nature and the beauty that it represents. Each bottle is infused with nature as we use handpicked, measured botanicals and natural mineral spring water to ensure the freshest, most authentic taste.
THE DISTILLATION
Before the distillation begins the botanicals are added by hand to our copper still along with a mixture of grain neutral spirit and water. The botanicals are then rested in the spirit and water to allow the flavours to infuse.
THE LAST STEP
Finally, our gin is ready for you to enjoy! Best savored surrounded by great company in a setting with fantastic lighting.
THE PERFECT SERVE
Simply tipping our gin in any old glass won’t cut it, as even glass shape can change the experience. For the penultimate perfect serve, use a cabernet glass. Why a cabernet glass and not the usual highball glass? Because gin needs swirling space to ensure you get the best of those delicate botanicals. Pop in a wedge of fresh lime to cut into those flavours and some ice to keep it tasting sharp and you are ready to go.
BOTANICALS
You will hear us gin distillers talk about botanicals a lot! But what are they? Well, botanicals give gin its flavour. Botanicals are usually herbs, spices, and fruits, but only one botanical is required to make gin qualify as gin and that is the juniper berry. Juniper gives gin the classic gin flavour. Juniper berries are grown on coniferous trees and are essentially a spice. Without juniper you don’t have gin, the name ‘gin’ actually comes from shortening the Dutch word for juniper, jenever.
